Simple Chicken Salad with Almonds in Lettuce Cups

This is the sort of thing I throw together when I have leftover chicken breast and don’t feel like working too hard for lunch.  Enjoy!




  1. Cut your chicken into 1/2 inch cubes and place in mixing bowl.
  2. Add your mayo and heavy cream and toss until well coated and creamy.
  3. Carefully crush your almonds and finely dice your chives.
  4. Prepare your lettuce cups.  Spoon chicken onto the lettuce and top with crushed almonds and chives.  Enjoy!
