I love how easy and fancy this is – such a delicious show stopper.
Ingredients
- 1 pork tenderloin (about 1 lb)
- 1 small jar of pesto (about 3 oz)
- 3 oz prosciutto
- 1 tsp olive oil

Instructions
- Preheat oven to 450 degrees
- Cover a baking sheet with aluminum foil and brush with olive oil.
- Lay out the prosciutto overlapping slightly across the sheet. Spread 2 tbsp of pesto down the center of the prosciutto lengthwise. Place the pork tenderloin on top. Cover the top and sides of the tenderloin with the remaining 4 tbsp of pesto. Gently pull the ends of the prosciutto together and overlap. Turn the tenderloin over so that the overlapping prosciutto is underneath. If there’s a skinny end, tuck it under.
- Bake the tenderloin for 20-25 minutes (takes 20 for a 1lb loin). Cover in aluminum foil and rest for 15 minutes before slicing and serving. Enjoy!
